
Whose toddler eats fresh or cooked spinach? … [silence] … thought so!
For some reason a smoothie will never be rejected in our house. Especially because of the ridiculously popular ‘smoothie’ brand that I’ve unconsciously developed. Just the mere mention of the word has my children chomping at the bit. I always add veggies to the mix to make the association less about it being a sweet fruity drink, and more about the cool colours and textures.
I always make sure there is a bit extra and pop the leftovers into lollipop molds and in the freezer. These are handed out as ‘special treats’ to the kids. They’re happy and I’m skipping for joy!
There are so many great smoothie recipes out there, here is one that goes down a storm in our house:
- 2 handfuls of spinach leaves
- 1 green apple chopped
- 1 ripe banana chopped
- 1 tbsp lime juice
- 1 handful of ice
- 300ml coconut water
Whizz together in a blender and serve. Keep the blender running until you have a lovely smooth consistency.
