This little beauty of a recipe came from our nutritionist Davinia from Zesty Fox nutrition as a quick and easy healthy breakfast.

We quite often say that the trick with getting our fussy monkeys to buy into something is how we brand and market it. So offering your kiddo’s pancakes, no matter what they are made of, is going to go down well.

We always go for versions of recipes where you can get the best bang for your buck when it comes to nutrition, and these are no exception. They are made with just 3 ingredients, and each of those offer some great nutrition wins. The eggs are packed with protein and offer pretty much an alphabet of vitamins, the oats offer soluble fibre, antioxidants and sustained energy and the banana gives a burst of energy, as well as lots of goodness such as vitamin B-6, C, manganese, potassium and magnesium (promoting good sleep people!)

We have made some serving suggestions below.

Supervise your little ones helping to spoon the batter onto the pan, and flip them over through cooking. You can have some fun using cookie cutters to make them fun shapes too.


This recipe will make 8 small pancakes.

  • 1 cup rolled oats
  • 1 large banana
  • 2 eggs
  • a little coconut oil or butter
  • fresh fruit or yoghurt to serve

Blend the banana, eggs and rolled oats together. In a frying pan, cook spoonfuls of the batter in a little coconut oil.

We love ours with fresh fruit and natural yoghurt. Other options could be canned, dried or frozen fruit, nuts and seeds, grated coconut, honey and lemon juice.

Serve them up for breakfast or pop them in lunchboxes.
